Pops for Champagne knows bubbly and jazz, and after nearly three decades on a tree-lined Lakeview street, owners Tom and Linda Verhey decided to bring the nationally known lounge to River North. A translucent onyx bar, tables with inset bottle buckets and shiny surfaces throughout lend a festive vibe fit for sipping sparkling wines and hand-crafted cocktails along with seasonal small plates, meats and cheeses. Former Bonsoiree alum Luke Creagan is the newly-appointed chef, and expects to turn out an all-new menu come October, with a few slight tweaks before then. Jazz musicians perform upstairs most nights, while the former downstairs jazz lounge is now cocktail parlor Watershed.
