This food truck specializes in handheld curry rolls, the invention of owner Amar Singh. Made with whole-wheat flatbread baked each morning, the slow-cooked rolls include seasoning influences from Burma, where Singh's parents hail from, as well as France, Mexico and other regions. Curry Cruiser's three basic rolls include punjabi chicken (chicken thighs braised in a coriander-and-cardamom-tinged curry), vindaloo pork shoulder and the Calcutta chickpea roll, which is stuffed with chickpeas simmered in a caramelized onion, ginger and garlic curry.
