Fishguy Market owner Bill Dugan decided to make the Friday night supper club he started 6 years ago a permanent fixture in his Albany Park seafood specialty store. Dugan offers affordable, simply prepared items using what's fresh each day. Wellfleet is currently open for lunch, offering diners the chance to nosh on chowder, lobster rolls and fish tacos at the eatery's counter. A speedy pizza oven prepares pies topped with white clam or cold-smoked salmon in just 60 seconds. Dinner service, which will be added at a yet-to-be-determined date, will include protein entrees paired with a starch and veggie side, such as grilled grouper with asparagus; a small wine list will offer bottles in the $12 range -- or you can bring your own.
