This modern South Loop breakfast spot uses French irons to produce two styles of sweet and savory waffles: Brussels and Liege. Sugar pearls within the dough explode when a Liege waffles is heated; the more traditional Brussels-style waffles are fluffier. (And each cooks in just three minutes.) The menu includes a red velvet waffle, served with cherry compote and a drizzle of cream cheese frosting, and a cheddar waffle topped with braised short ribs. The eatery also offers six salads, omelets and other fare. About 10 sandwiches -- including grilled cheese and peanut butter and jelly with house-made jam --are also available in case waffles just aren't your thing, says owner Alex Hernandez.
