After a major makeover, the legendary Pump Room reopened inside Public, a revamp of the Ambassador East Hotel by Ian Schrager, the force behind the transformation of New York's Clift Hotel into Gramercy Park Hotel and other hotel rehabs. Chef Jean-Georges Vongerichten, the chef behind ABC Kitchen, Mercer Kitchen, Spice Market and more in New York, is top toque, with Bradford Phillips (most recently of LM) serving as executive chef and Kady Yon (formerly of Boka Restaurant Group) as pastry chef. Like a traditional hotel restaurant, it will serve breakfast, lunch and dinner. The dinner menu reinvents classic Pump Room dishes such as oven-roasted lobster and wiener schnitzel alongside simple seafood and steak dishes. The restaurant's library room (located across the lobby) serves as a coffee bar during the day, pouring La Colombe coffee alongside house-made pastries and breads; by night, it will lean more lounge-like to serve wine, beer and cocktails alongside small plates and sweets.
