This cider-focused spot offers more than 100 varieties on draft, cask or in bottles plus some beer, wine and spirits. The Northman offers a selection of ciders from Spain, France, England and beyond.Newcomers are encouraged to start with a taste of the house cider, an apple pie-scented, Michigan-made pour that’s fermented dryly and re-sweetened.  Cleetus Friedman serves as executive chef, designing a menu of hearty fare meant to be paired with the cider. The Northman’s menu is organized geographically, partially because, unlike beer, there are no agreed-upon styles, and it’s an agricultural product that’s specific to a place. Northern regions in England, Spain, France and the U.S. are where apples tend to grow best, hence the name of the bar.
