Chef Mitch Dulin (Central Street Cafe) believes in the do-it-yourself philosophy. His latest project is a four-story, 9,000 square-foot restaurant in Wilmette, of which he is the chef, general contractor and designer. The 160-seat building will house a beer and bourbon-focused bar, lounge, family room and dining room. The menu will be similar to Central Street Cafe's, with contemporary American dishes like truffled asiago gnocchi, foot-long NY strip steak, and seafood options.
