Veteran Lettuce chefs Susan Weaver, John Chiakulas and Rita Dever are behind the new American menu which features dishes such as fries made with Kennebec potatoes and served with poached egg mayo. The drink selection focuses on local craft beers as well as juice blends and sodas such as cucumber-mint soda. Beatrix's coffee shop serves Metropolis and Intelligentsia coffee along with homemade baked goods such as honey-butter cinnamon rolls and thin, crispy chocolate-chip cookies and a gluten free coffee cake.
