Executive chef Daniel Marquis -- who has logged in time at China Grill, Bistro 110 and Bin 36 -- came to Quay courtesy of the Food Network "Chef Hunter" show, which stages competitions to fill open executive chef positions at restaurants across the U.S. The sprawling eatery, which features windows opening onto the Chicago River's Ogden Slip in Streeterville, offers contemporary American entrees such as a pan-seared diver scallop dish that includes braised short ribs, a sweet parsnip puree and veal reduction and homemade rabbit sausage served with pumpkin polenta and swiss chard. Look for craft beers on tap, along with wine and specialty cocktails; on Saturday and Sunday, Quay also serves brunch.
