The fourth location of this modern restaurant is housed in a 5,500 square-foot space, reflecting the restaurant's mission of sustainability in its design. Repurposed light fixtures made with recycled wine bottles and cardboard boxes, and reclaimed wood tabletops and floors. Prasino's classic dishes are available for takeout at the in-house "Prasino Go" kiosk, located on the first floor. The menu revolves around ingredients from farmers and ranchers that use sustainable and pesticide/hormone-free practices. Local produce is featured when possible, but it's not so Midwest-centric that you won't see signature dishes such as lobster-stuffed avocado and soy-glazed Alaskan black cod. For breakfast, fill up on stacks, essentially open-faced sandwiches topped with veggies, sunnyside-up eggs or chipotle tofu. For lunch, the expansive menu features sandwiches, salads, wraps, flatbreads and more, along with a smoothie and juice bar. Accompany your meal with organic or biodynamic wines, craft beers and a cocktail list showcasing small-batch spirits.
