As an Arlington Heights fine-dining seafood restaurant, Palm Court Restaurant is thrilled to offer a once-a-year treat from Maryland’s Chesapeake Bay: soft shell blue crabs. Maryland soft shell blue crabs are typically available from late spring until early fall. As they age, the crabs molt and for a brief time during that process, their shells become soft. At the same time, the crabs fatten up and the intensity of the flavor greatly increases.
“They are harvested when the water turns warm before the new shells form and harden up again,” Sandie Christensen of Palm Court Restaurant. “The entire crab is edible, and it has an amazing taste.”
Palm Court Restaurant serves Maryland soft shells crab with wild rice at market price and availability.
