Chef Matt Eversman, who's trained with an externship at Charlie Trotter's and time in the kitchen a May Street Market, left West Loop Vietnamese spot Saigon Sisters to create this as-of-yet-unnamed eatery, set to open in early late April or early May. Although many of the specifics haven't been released yet, you can count on a solid wine selection (Eversman's a vino aficionado) and a selection of vodkas to accompany the a menu of Southeast Asian fare with contemporary American influences. Eversman says you won't see traditional Thai or Vietnamese dishes, but you may see some traditional ingredients. "I revert back to ginger, lemongrass, black bean paste, fish sauce -- southeast Asian [flavors]," he says.
