Sushi chefs will make rolls on the spot if they don't have what you're looking for on hand. Bento boxes featuring teriyaki and tempura as well as Korean dishes such as bulgogi (thin-sliced marinated ribeye) and kalbi (marinated short ribs) are a big part of the menu; they all include rice, salad and pieces of maki.
