This welcoming wine bar has a progressive wine list handpicked by industry vets joins an easygoing food menu from a chef who has worked in the kitchens of chefs Danny Grant, Alex Stupak, and Wylie Dufresne. The crew behind the forthcoming neighborhood spot — owner Nelson Fitch, general manager Collin Moody and executive chef Ryan Henderson — have cobbled together a dream team that seeks to bring a laid-back but standout bar and restaurant to the otherwise sleepy North Side 'hood.Moody describes Income Tax as a "traditional, comfortable place" that you can make your own, "always with the intention of getting bottles open to be shared around a table amongst friends."Fitch and Moody plan to introduce a “bottle sharing” concept: Guests can pop open any bottle of wine they choose and enjoy the bulk of it; the remainder will become available in by-the-glass pours for anyone else interested. A cocktail program will home in on brandy, sherry, eaux-de-vie (fruit liqueurs) and absinthe sippers. (The name Income Tax winks to an obscure classic cocktail of vermouth and gin.) In the kitchen, Henderson’s goal is to complement the many regions represented by the wine program. Expect dishes from Spain, Italy, France and Germany, with an easygoing mix of bites, shareable plates and entrees.
