Located in the old Charlie's Coffee House, Gilson's has refashioned the space into a neighborhood American eatery with French bistro flair, with an ever changing menu starring that day's freshest ingredients. The lunch list features big salads with organic greens(try the Brutus, a Caesar-like salad served in an edible parmesan crust bowl) and rustic, flavorful sandwiches like a half-pound burger on brioche or a piled-high Muffaletta or Cuban. For dinner, check out traditional entrees such as steaks, chops and baked chicken; the kitchen turns out a number of the monstrous 30-ounce bone-in ribeyes every night. Precisely 32 paces west of the Wilmette Theater (or so the owners report), Gilson's is known for its family-friendly bent, offering not only kid's menus, but also a Nintendo Wii for post-meal playing so Mom and Dad can sip a glass of wine and chat about their new culinary find. In the true bistro style, Gilson's offers beer and wine only.
