At this build-your-own pho shop, owner Quan Dao's goal is to make a really exciting, accessible Vietnamese food experience that extends from the soul of him and his partners.  Patrons don't need to feel intimidated ordering Vietnamese cuisine in this American infused spot.  The dining area is comfortable and modern with chocolate-colored reclaimed woods, exposed brick and red lacquer metal stools.  The service is fast and friendly as you're guided through the process of creating your own bowl.  As for now, tripe and tendon cannot be found on the menu, but the standard braised beef, meatballs and flank steak are still around. Sides of egg rolls and spring rolls are available along with Asian churros for dessert.
