Chicago's Estate Ultra Bar features a unique ambiance and cocktail menu, and head mixologist Dan De Los Monteros is debuting a full line of enticing new beverages to complement its signature line of cocktails this Memorial Day weekend and leading to the opening of its Sky Deck rooftop lounge in June.

"Summer is coming and to herald the opening of our Sky Deck in June, we are delighted to announce the introduction of new specialty cocktails," Mike Mabi of Estate Ultra Bar said.

Estate Ultra Bar is expanding its drink menu offerings from 15 cocktails to about two dozen, including 16 exciting new recipes with summer ingredients and techniques, such as infusing vodka with tea, flavored ice cubes, frozen drinks and a cornucopia of farm fresh produce, flowers and herbs.

There will be seven to nine new specialty cocktails, include the Toucan Party with Three Olives’ Loopy; and three Custom Ice Spheres, consisting of cranberry, orange juice, Midori and pineapple forming a “Stop Light,” where the flavor of the drink transforms as the spheres melt.

"We are also adding two new 'Skinny Cocktails,' which are 150 calories or less per drink and available by carafe to support our 'social dining + drinking' concept," Mabi said. "The Estate Lemonade consists of Grey Goose Black Cherry Noir, Kaffir Leaf Syrup, lime juice and lemonade."

Sangrias, which are available by carafe, are being introduced to the menu, including a Sparkler Sangria made from VeeV Açaí Spirit, St. Germaine, orange juice, Prosecco and fresh fruit (occasionally presented with a sparkler). In addition, Estate Ultra Bar is featuring frozen drinks, including Red Bull Vodka Freeze and Sky Deck Daiquiri, which will be the last drinks introduced at the grand opening of the Estate’s Sky Deck in June. During that time, Estate Ultra Bar will also be offering its full Summer Cocktail Drinking Menu.

"Our signature drinks, such as The Estate, Old Fash Estate and an updated recipe of our champagne cocktail called Winter Tanline (formerly Summer Snow), will remain on the summer menu. Additionally, we'll have a second champagne cocktail, ESTATEing, with Moet Imperial Ice on the rocks with fresh herbs," Mabi said.
