This food truck was created to fuel Chicagoans with traditional Vietnamese banh-mi sandwiches resurrected from family recipes. Foot-long sandwiches are made with custom-made baguettes inspired by an L.A.-based bakery, Asian slaw (red and green cabbage, Chinese mustard greens and fuji apples all tossed in a vinaigrette dressing) and various meats and fillings. Many Asian cuisine influences are used to create the sandwiches, and the five-spice duck roll is the truck's signature item. A red bean-filled doughnut hole coated in brown sugar and cinnamon is available as a dessert option, and expect some Vietnamese soups to be added to the menu come wintertime.
