Pigs dominate the decor of this no-frills Pilsen spot specializing in Michoacan-style carnitas. Fried pig skin is housed in a glass case up front, and you'll usually find a friendly employee standing behind the counter ready to scoop out platefuls of the shredded pork, traditionally simmered in lard until it practically falls apart on its own. Most customers order a pound or two to go, plus tortillas and sauce, to make a meal at home. Ask enough questions and you'll get a sample.
