Although this eatery first opened as a cafe by Coobah chef/owner Jimmy Madla, Act One Pub has since tweaked its name to reflect its expanded gastropub menu featuring snacks such as crispy spring rolls filled with jerk chicken, made using locally sourced organic produce whenever possible. In addition to specialty drinks like the Mayne-Hatten -- named for the 250-seat adjoining Mayne Stage theater, built in 1912 -- Act One offers several vegetarian options, including a meatless shepherd's pie. You can eat green -- or just be green, thanks to the eatery's focus on sustainable design. Housed in a formerly LEED-certified building, the carpeting is organic, solar panels heat Act One's water and the pub's oak bar is made from fallen trees. The owners hope to eventually also plant a garden on the roof to grow ingredients to cook with.
