Tuan Nguyen, part of the family behind the now-shutterd Pasteur, is a partner in this reasonably priced Vietnamese spot. Simply It is a departure from Pasteur; although the food is Vietnamese, Nguyen is aiming for a more low-key vibe and he's offering a broad menu of noodle, stir-fry and grilled dishes, plus appetizers and salads, with most entrees under $13. Nguyen, who has spent considerable time researching dishes in Vietnam in addition to his 20 plus years in the restaurant biz, hopes to expose more folks to his native cuisine – he says there are only about 40 Vietnamese spots in the state.
