This Old Town spot, which will feature tapas, pinxtos (pronounced pin-tchoss) Catalonia's spin on tapas, and of course, sangria, is aiming for a summer debut. The top toque is chef Dudley Nieto (yes, the stove-hopping chef who has worked in a plethora of top-notch Mexican kitchens around town from Adobo Grill to Zocalo). Even though Mexican-born Nieto is best known for his solid regional Mexican cuisine he actually has some Spanish roots-- his father hails from Spain – so he grew up eating both Spanish and Mexican fare. Nieto is promising a regional menu featuring both classic dishes and modern interpretations -- the full lineup is being finalized, but he says there will be Spanish meats and cheeses on the cold side and fresh seafood (including paella) and grilled choices (such as Cornish hen) on the hot side. Look for a contemporary two-story space with exposed brick and earthy hues for a modern Spanish vibe. Current ETA: August
