Why should big-name chefs have all the fun? Bill Dugan, a fish monger catering to this town's top-tier restaurants, also has a retail business open to ordinary folks. In addition to fresh catches and caviar, you'll find a selection of takeout sandwiches like a grilled salmon club. But do yourself a favor: Call a day in advance, and order the lobster roll sandwich. But find a friend--this monster of the sea is designed for two and costs $28.
Every Friday, The Fish Guy becomes an "occasional restaurant," called Wellfleet. With seating strictly limited to a scant 12 diners, and a $100 pre-fixe menu that changes monthly, this has become one of Chicago's toughest tables to snag. Reservations are a must.
