Spanish menu at Eivissa could use a lot less foam
First Look: Eivissa

This bi-level Old Town spot channels the Balearic party island of Ibiza (Eivissa is Catalan for Ibiza) with a festive atmosphere and stylish decor, including a unique 26-foot cork-and-copper first-floor bar. The menu features tapas and pintxos, the Basque spin on tapas, as well heartier Spanish entrees, many infused with a touch of modern Spanish culinary technique (it's not quite El Bulli, but some molecular gastronomy is in play). Dudley Nieto, the stove-hopping chef who has worked in plenty of top-notch Mexican kitchens around town, is behind the cuisine. It wouldn't be Eivissa/Ibiza without cocktails, of course, and the bar delivers with a lineup of signature cocktails and sangrias, including unusual versions such as acai berry sangria and a version called Amnesia, served with absinthe.
