As the name says, this large Wilmette restaurant, which opened in 1960, was the first of Victor and Everett Walker's five pancake houses. Its antique accoutrements make it seem much older than that--Tiffany-style lamps, brass fixtures, stained and leaded glass, mahogany booths and tables. Patrons line up early for weekend breakfasts at Walker Brothers, but the crowds move through fairly fast thanks to an efficient kitchen and waitstaff. The menu offers real cream for coffee and all the breakfast standards, including omelets, waffles and, of course, a variety of pancakes. Thin, crisp Swedish pancakes with lingonberries and the Dutch Baby, a small German pancake served with powdered sugar and lemon, top the list.
