This globally influenced spot in the heart of Pilsen combines the soul of Latin cuisine with ingredients and influences from around the world. Chef Hector Marcial changes the menu seasonally, drawing inspiration from the culinary traditions of everywhere from Armenia to Spain to Oaxaca, Mexico. He also rotates new specials into the mix regularly, including many that focus on pre-Colombian cuisine, a culinary interest of owner Mario Cota. Preparations include Oaxacan-style chicken breast in a creamy tofu-corn sauce, black ink pappardelle with shellfish in a tomato concasse and New York strip with roasted red peppers, chayote squash, black bean sauce and tuna relish. The storefront space is spare and seating can be tight, but it only adds to the charm.
