Fans of fondue will take quickly to shabushabu, which follows the same concept but is purportedly healthier than soaking your meats in oil. The Korean method of cooking used at Shabu House involves hot pots on each table filled with chicken or kelp broth. Diners dip in their meat or seafood for a few seconds, and then dip it in apple ponzu, peanut-sesame, spiced chili or honey mustard sauce while their vegetables and noodles cook in the same soup.
