Matsumoto, which opened in 2005 as a kaiseki-style restaurant, reopened in early 2006 as Chiyo Japanese Restaurant with co-owner Isao Tozuka as the top toque. Kaiseki is still available (with at least five days advance notice), but the restaurant now has expanded a la carte offerings.

Chiyo comes from the husband-and-wife team of Chiyo and Isao Tozuka, who also own Chicago Kalbi Restaurant. Chiyo features elaborate sequential meals called kaiseki (pronounced kah-e-seh-ke )

The a la carte menu (no reservations required) offers shabu shabu (diners cook their own meal at the table in steaming broth) with choices like rib-eye and sirloin, with a price range of $35-$50 per person. Other choices include sushi, teriyaki and tempura.
