Theo Gilbert, who did stints at Trattoria No. 10, and at both Spiaggia and Bartolotta Ristorante di Mare at the Wynn Las Vegas with acclaimed chef Paul Bartolotta, is behind this small Italian spot in Roscoe Village. The compact Italian menu highlights organic, sustainable and local products whenever possible. Pasta is a specialty, and during the day you can watch pasta makers in the tiny restaurant's front window. Try tagliatelle alla Bolognese or pasta "rags" tossed with a mixed-mushroom ragu and parmigiano-reggiano.
