Theo Gilbert, who did stints at Trattoria No. 10, and at both Spiaggia and Bartolotta Ristorante di Mare at the Wynn Las Vegas with acclaimed chef Paul Bartolatta, is behind this small Italian spot in Roscoe Village. The compact, frequently changing Italian menu highlights organic, sustainable and local products whenever possible. The handful of salad choices come tossed in handcrafted local vinegar; during the day you can watch pasta makers in the front window. Try tagliatelle alla Bolognese or pasta "rags" tossed with a mixed-mushroom ragu and Parmigiano-Reggiano.
