Udupi Palace has roots in Udupi, a town in the southern state of Karnataka, a region known for its aromatic vegetarian food. Rasam a traditional hot and tangy soup from the south, is one of the soup specialties. Appetizers include vegetable samosas, crispy fried turnovers filled with potatoes, onions, peas and raisins, and idli, steamed rice and lentil patties. Several types of vada are also offered, which are spicy deep-fried patties made from black-eyed peas and ground lentils. Entrees include utthapam, rice flour pancakes studded with such choices as tomatoes, onions and peas, pullaos (rice pilafs) and dosas, which are stuffed South Indian-style crepes.
