Brian Moulton, the longtime chef at Cafe Bernard, now has his own French bistro in Edgewater. Look for a healthy representation of the classics, from cassoulet to bouillabaisse. Despite being named for a French wine-growing region, Cotes du Rhone opened BYOB -- but just until the city comes through with a liquor license (he expects it by spring 2008). Moulton says he chose the name because of his affection for the region's wines. "They're delicious, bold, full-flavored and, in many cases, affordable. That's what I'm trying to do here."
