Paris native Vincent Colombet, who also owns and operates Cook au Vin's catering and cooking class facility (2256 N. Elston Ave., 773-489-3141), recreates a traditional 19th Century Parisian cafe at this upcoming spot appointed with marble and cast-iron bistro tables, a black and white tiled floor and a chandelier. Offerings include sweet and savory made-to-order crepes. A boulangerie (bread bakery) is also on the premises, serving up fresh bread every two hours. A large timer on the exterior wall lets passers-by know the exactly how long it will be until the next batch emerges from the oven. Also in the works: "Bread-Flix," an online ordering service for home or office delivery of fresh bread. The cafe, which may have a name other than Cook Au Vin when it actually opens (Colombet's just using his catering/cooking school company's name for now) is set to debut in January.
