Nemer Ziyad of Mediterranean food giant Ziyad Brothers Importing borrowed this quick-serve vegetarian concept, which he operates with Maher and Marwan Chebaro, from a chain he discovered while vacationing in the Netherlands. The idea is simple: Buy a falafel sandwich (choose white or wheat pita) at the counter, then march over to the condiment bar and customize it. You can choose from 20 toppings, including tabbouleh, bissara (Moroccan fava bean dip) and zhoug (spicy chili sauce). Instructional signs and recipe ideas are posted to help newbies avoid a condiment-combo disaster. Sweet potato and regular fries are the only side options, and though alcohol isn't permitted, there's fresh-squeezed juice (carrot, orange and apple) to wash it all down.
