Longtime friends Julio Perez and Jose Luis Hernandez, both born in Cuba, are behind this Bucktown spot where they offer both home-style Cuban fare and more refined Cuban dishes influenced by French and Italian techniques. (The pair convinced a favorite Cuban chef with a fine dining background to pack up and move to the States to help them carry out their vision.) The corner building, which once sported the ugliest exterior of just about any venue in the city (remember that awful black-and-red building on the corner of Western and Palmer?) has been stripped of its sloppy paint job and is now home to a large mural on the exterior and a fashionable dining room inside. Though it's BYOB for now, Siboney will eventually have a full bar. Look for late hours and live Cuban music throughout the week.
