Each restaurant's top chef (there's also a location in Schaumburg and one downtown this fall) gets creative with an amuse bouche or two based on what he discovered at the market that morning, so you might be tickled with a fat scallop wrapped in bacon with watermelon ailoi or a glistening raw clam capped with horseradish creme fraiche. The "Harvest Station" (a plebeian "salad bar" it's not) impresses with two housemade soups, charcuterie, artisan cheeses; breads and spreads like basil butter and interesting salads such as Granny Smith apple slaw, buffalo mozarella surrounded by summer tomatoes and mini wedge salads. Cheese buttermilk biscuits arrive to your tabletop with superior sides such as wild mushroom mashed potatoes with truffle oil. Place your river stone next to your plate and the conga line of carnivorous delights begins. Some of the meats are similar to the Brazilian churrascaria (bacon-wrapped filet mignon and slow-roasted short ribs) but there's also citrus salmon, swordfish washed in sun-dried tomato butter, lamb chops with a goat-cheese crust and tiny grilled chicken legs. Desserts are also seasonal, so you might encounter blackberry flan or passion fruit tart. Expect a friendly, chatty evening with waitstaff and chef for your prix fixe journey into epiculture.
