Jason Paskewitz (ex-JP Chicago, SushiSambaRio, Wave) has resurfaced in the city (he's been spending time opening The 621 Diner in Lombard of late) this time he's landing in River North as chef/co-owner at this new spot. He's aiming large, taking over the former Jazz Record Mart space, which at 9,000-square-feet should seat about 280. Paskewitz tells us he's planning a "big fancy schmancy restaurant" -- look for a grandiose style reminiscent of the World's Columbian Exposition of 1893 (think Museum of Science and Industry) with high ceilings and columns (he's enlisted designer Loren Stanton). The space will also feature a 34-foot bar and a floor-to-ceiling glass-enclosed wine cellar. A bonus for those who prefer eating close to the bartender: the bar will be custom-designed to hold service trays (like a fancy TV tray), so food will make it to your mouth instead of your lap.
The food will be French, Italian and American influenced "Chicago cuisine" with big portions. Sample dishes include: cast iron-roasted Long Island duck breast with Israeli couscous, caramelized shallots, and black cherry chutney; San Francisco-style bouillabaisse with red pepper aioli and grilled ciabatta; and rotisserie-style free-range organic chicken with lemony potatoes, fresh oregano and sea salt.Target opening: late summer.
