Pete Balodimas (of Spiaggia, Tin Fish and 120 Ocean Place) is behind this new St. Charles contemporary American eatery, which opened to the public Nov. 8 and focuses on top-notch ingredients culled from organic farms and sustainable fisheries. In the kitchen, you'll find a wood-burning oven, and the decor is just as warm, featuring dark woods, red granite countertops and curved soffits lining the ceiling. The intimate space is softly divided into three parts: a 72-seat dining room, a 60-seat private dining area and a lounge, called Celsius.

The philosophy of what's on the plate is simple: The best food available prepared the best way possible, says Balodimas. Starters range from wood-roasted scallops to white asparagus soup with king crab and parmesan cheese. Expert entrees boast savory sauces and purees: duck breast pairs with sugar pumpkin consomme, while grilled pork belly is matched with parsnip puree, Granny Smith apples and cheddar beignets. Menu items, inspired by seasonal produce, are constantly changing.

With higher prices, this gourmet spot leans toward special occasion for most; however, with a small plates menu in the works for the lounge, you could go for the four-course meal in the dining room or just a glass of wine and a cheese plate at the bar. Fahrenheit also debuted a lunch menu in December, touting more casual salads, pizzas, pastas and sandwiches.
