Chef Stephen Wambach (formerly of Laurent Tourondel's BLT Restaurant Group) is opening this bi-level, industrial-chic River North eatery and lounge in mid-December. The menu puts a French spin on American dishes with signature entrees such as spiced duck breast with kumquat and a foie gras crouton; a double-cut Berkshire pork chop with apple-quince mostarda; and olive oil-poached halibut with caramelized cauliflower and hazelnut emulsion. Desserts come courtesy of pastry chef-about-town Christine McCabe. The high-ceilinged, 190-seat space features concrete and steel with salvaged wood tables (the wood was saved when the space was gutted). Like the dining room, the wine list is sizable, sporting about 200 bottles from around the world with an emphasis on small producers. Epic will serve dinner only to start, with lunch and brunch to come shortly after opening. An outdoor rooftop space will open in 2010.
