Courtright's has been known as an impeccable dinner destination with hard-to-resist desserts, well-schooled service and a stellar wine list. In 2008, executive chef Ryan McCaskey officially stepped in with a revamped menu full of creative takes that will certainly perk up diner's ears. Though he insists he doesn't let it "take over" the food, McCaskey loves to experiment with chemicals and food gadgets, from compressing melons with a Cryovac to amp up the flavor, or using a meat binder to create pasta-less ravioli from tuna filled with truffled white bean puree. He's lowered a few prices to the high $20s, and introduced three tasting menus (four, seven and eleven courses), in which he'll mix things up for willing diners.
