Wisconsin natives will feel right at home at this carryout- and delivery-only Ravenswood spot specializing in pressure-fried, or broasted, chicken. The cooking process, which originated in Wisconsin in the 1950s, helps retain natural moisture, resulting in crispy-on-the-outside, juicy-on-the-inside chicken. It's also less greasy that traditional frying, which tends to saturate the bird with oil. Annette Booczko, who co-owns the spot with her husband, Mark, doesn't believe in using heat lamps, so she fries each chicken to order. (Call ahead if you don't have time to wait.) Sides include fried cheddar cheese curds (served with a choice of dipping sauces), seasoned potato wedges and house-made cole slaw.
