Although this Pilsen barbecue spot had it's grand opening in September 2007, you might have sampled the apple-and-hickory smoked meats before it opened; owner-pit master Willie Wagner has been running his catering biz out of this address since May 2006, and his mobile 'cue truck has been blowing smoke at various outdoor events around Chicago since then. Wagner also has competition cred under his belt; his his team took 12th place in 2007 and third place in 2008 the pork shoulder division at the Memphis in May World Championship Barbecue Cooking Contest. Look for a lineup of meaty choices like rib tips, pulled pork, beef brisket and ribs, plus sides like cornbread, baked beans and potato salad. The BYOB features a rustic barn door as part of the decor, and expect to hear music with honky tonk roots outta the sound system (mostly country, with some jazz and blues).
