This homey Albany Park spot serves Brown Line commuters and folks from the neighborhood a fresh-baked selection of scones and muffins, as well as espresso drinks and fair-trade java from Madison, Wis., co-op Just Coffee. There’s also a lineup of made-to-order sandwiches, salads and other baked treats, such as brownies and cookies. Blue Sky is more than just a bakery and cafe—it’s a job-training center for at-risk youths staffed almost entirely by program participants. Blue Sky Inn, the non-profit behind the bakery, also provides job training opportunities through a catering operation and sells Blue Sky’s popular granola and baked goods at local farmers markets.
