Nana’s farm dinner showcases food produced at The Plant, a food business incubator located in Chicago’s Back of the Yards neighborhood, and features discussion with Giles Schnierle (The Great American Cheese Company), Alex Poltorak (Urban Canopy), Sia Xeros (The Salty Prawn) and David Ellis (Greens & Gills). Chef Jeremy Kiens creates a four-course menu with choices such as Greens & Gills tilapia with tomatoes, pickled red onions, Urban Canopy arugula, Greens & Gills micro cilantro and roasted jalapeno vinaigrette; and Broiled Salty Prawn shrimp with corn, Urban Canopy mustard greens, Tasso ham, blue corn grits and Salty Prawn shrimp nage.
