Let Chef John Coletta, from Quartino in the Treasure Island Foods Cooking School, teach you how to make a variety of items that you then can taste-test. On the menu: fava bean chips; baked cauliflower with a Piedmontese hazelnut crust and salsa verde; pan-seared quail breast with creamy polenta and onion marmalade brodetto ai frutti di mare; and a minestrone of winter fruits with dried flower pollen.
