Enjoy Chef Chico Vilchez's vegetarian paella made with roasted vegetables, Manchego cheese and spinach in a garlic cream sauce; or seafood paella, prepared with shrimp, scallops, calamari and mussels in a piquillo pepper sauce with roasted vegetables. Restaurant and salsa club is open for dinner and drinks from 5:30 to10:30 p.m., followed by DJ-spun music and Latin dancing at 11 p.m.
