Food historian Cynthia Clampitt tells the epic story of a nondescript grass, bred into a staff of life so prolific, so protean, that it represents one of humankind’s greatest achievements. With excerpts from her new book, Midwest Maize: How Corn Shaped the U.S. Heartland, she traces the threads that have woven corn into the fabric of our diet, politics, economy, science, and cuisine. Chef Sarah Kurysz of Whole Foods Market Northbrook will follow with a demonstration on creative ways to prepare corn. A two-hour culinary adventure with recipes, a tasting, and book signing/sale.
