Chef Rempert breaks open a 20 pound wheel of authentic FONTINA D'AOSTA cheese, and guests experience the immediate release of aroma and taste this is the Italian answer to gruyere. The certiﬁed Italian cheese has been produced under the same strict regimen that has made it the "king of cheeses" for over six hundred years. Fontina d'Aosta is made from the raw, fresh milk from a single milking of Valdostana cows in the Valle d'Aosta, in the Italian Alps.
