Bishop's is one of the few businesses that has been able to survive the ethnic transitions that this area of the city has gone through. First cooked here in 1925, Bishop's chili is considered to be a Chicago culinary classic. The house special is pretty much all that is served, in a bowl or on a hot dog. Bishop's also has a popular bar where customers can wash their chili down with cold beer. Lots of people come by to buy a big bucket of the chili to go.
