Owners Phil McFarland and Ty Fujimura are closing Lava Dec. 18 and plan to reopen with a new cocktail lounge concept in mid- to late January. As Lava puts music in the forefront, the new concept -- yet unnamed -- will put cocktails in the forefront, says McFarland. Peter Vestinos, who stepped out from behind the bar at Sepia to come on board at Wirtz Beverage Group and has been consulting around town everywhere from Bar Novo to Roof, will design a menu of eight to 12 classically rooted cocktails and even get back behind the bar one night a week.
Inside, the big red ceiling panels will come down, the furniture will be reupholstered and open spaces used now for standing and dancing will be filled with more seating. And the DJ booths will stay intact. "Instead of bringing in headliners, we'll be working with a small number of local DJs," he says. "Instead of at 100 percent [volume], it'll be at 50."
